Il cielo è grigio e tutto sembra più freddo di quello che è: il giorno perfetto per scaldarsi facendo un dolce! Sonoo una grande amante dei dolci ma in assoluto preferisco quelli fatti in casa con le ricette della nonna che riempiono la casa di un dolce profumo. Oggi ho deciso di fare la crostata con la nutella.
Ingredienti per la pastafrolla:
5 uova
1 kg di farina
1/2 kg di zucchero
1/2 kg di burro
1 bustina di lievito per dolci
Innanzitutto bisogna mescolare la farina al burro. Successivamente aggiungete lo zucchero e poi le uova cercando di creare un composto omogeneo. Una volta raggiunta una consistenza accettabile aggiungete il lievito e continuate ad impastare finchè non sarà completamente assorbito. Lasciate riposare l’impasto in frigo per una mezz’ora.
Mi raccomando cercate di toccare la pasta il meno possibile e di lavorarla con le mani fredde!
Dopo il “riposino” potrete lavorarla direttamente nella teglia. A seconda dei vostri gusti potrete proseguire in due modi. Se preferite che la crema rimanga morbida stendete l’impasto nella teglia e mettete sopra la carta da forno e i ceci lasciando cuocere solo la base a 220° finchè non raggiunge la cottura che preferite (fate attenzione che in questo caso dovrete ripassarla al forno). Una volta cotta la base aggiungete la crema e le classiche strisce sopra e lasciate cuocere nuovamente per un’altra mezz’oretta (se avete un forno che isola la cottura inferiore e superiore potete lasciare solo quella superiore). E il dolce è pronto!
Se invece preferite la crema un po’ più croccante potete semplicemente creare la vostra crostata e lasciarla cuocere tutta insieme.

The sky is grey and everything seems colder than what it is: what a perfect day to make a cake! I love every kind of cake but usually I prefer the homemade, the ones with grandma recipe that fill the house with a sweet smell. Today I decide to make the classic “Crostata” with nutella.
Ingredients for the short pastry or Pastafrolla:
5 eggs
1 kg/2,2 lb of flour “00”
1/2 kg/1,1 lb of sugar
1/2 kg/1,1 lb of butter
1 bag of baking powder
First of all, mix butter and flour, then add the sugar and finally the eggs. Once you have an homogenous paste add the baking powder, mix everything until it is completely absorved by the dough and let it stay in the fridge for half an hour. It is very important to touch the paste the less you can and manage it with cold hands :D.
After the paste “nap” you can work it in a oven dish. If you prefer a soft cream you have first to bake the base (220° until it reach a golden brown) with baking paper and chickpeas on the top (to let it leave space for the cream), then add the cream that you love (in my case Nutella), add the stripes on the top and let it bake again for more or less half an hour.
If you like a little more crunchy cream you can bake paste and cream together.
